Vanilla Bean Cake

Ingredients:

4 large eggs

6oz/ 150g Self-Raising Flour

2oz/ 50g Supreme Sponge Flour

8oz/ 200g Caster Sugar (white or golden)

8oz/ 200g Butter

1 tsp Vanilla Bean paste (i like this one)

1tsp Good Quality Vanilla extract (this is my favourite)

Method:

  1. Preheat the oven to 180°C
  2. Combine all the ingredients; except the vanilla’s into a large bowl, and mix until a nice smooth consistency using a stand or hand whisk
  3. Add the vanilla extract and paste and again mix
  4. Depending on whether you are going to make cupcakes, sandwich or one big sponge, line and prepare your tins.
  5. Divide the mixture into the tins and then as a rough guide (ovens vary!)
    1. Cupcakes: bake for 20 mins until golden and springy to the touch
    2. Sandwich cakes: bake for 25 mins until golden and springy
    3. Big one: 30-40 mins until golden and springy
  6.  I always pop a skewer into my cakes just to check they’re cooked all the way through
  7. That’s it! Decorate as you like and then enjoy!!
